The October Harvest Bowl: Roasted Sweet Potato, Pomegranate & Tahini

Ingredients
For the Bowl
2 medium sweet potatoes, peeled and cubed
1 tablespoon extra virgin olive oil
Salt and freshly ground black pepper, to taste
1 cup cooked quinoa
1 can chickpeas, drained, rinsed, and roasted
2 cups baby spinach or mixed greens
1 avocado, sliced
½ cup pomegranate arils
¼ cup roasted pumpkin seeds
Fresh parsley for garnish (optional)
Lemon Tahini Dressing
¼ cup tahini
Juice of 1 lemon
1 tablespoon extra virgin olive oil
1 teaspoon maple syrup or honey
1 small garlic clove, minced
2–4 tablespoons water
Salt and pepper to taste
Directions
Preheat your oven to 400°F.
Toss the cubed sweet potatoes with olive oil, salt, and pepper, then spread them evenly on a baking sheet. Roast for 25–30 minutes, turning halfway through, until tender and lightly caramelized.
If you're roasting your chickpeas, season them lightly and roast alongside the sweet potatoes for about 20–25 minutes, or until crisp.
While everything cooks, whisk together the tahini, lemon juice, olive oil, maple syrup, garlic, water, salt, and pepper until smooth and creamy. Add additional water as needed until the dressing reaches your preferred consistency.
To assemble the bowls, divide the spinach or mixed greens between serving bowls. Top with quinoa, roasted sweet potatoes, chickpeas, avocado, pomegranate arils, and pumpkin seeds. Finish with a generous drizzle of the lemon tahini dressing and garnish with fresh parsley if desired.
Serve immediately and enjoy.
